3. Add in the milk little at a time until it forms a smooth dough.
4. Eyeball the consistency add little more plain flour if it becomes too runny .

 Zeppole recipe

Makes around 24 medium sized balls
Preparation time: 15 mins
Cook time: 15-20mins

Ingredients:
2cups of Plain flour
1tsp of Salt
2 cups of Plain Yogurt
3 small Eggs
1 tbsp  milk

4 tsp of Baking Powder
4 tsp of Vanilla Extract
Any flavourless Frying Oil
Granulated Sugar for your taste (I put in around 4tbsp of sugar in mine )
Method:
• Add the oil to a big bottomed  pan and preheat it, you want the oil to be around 345 degrees.
You do not want the oil to be really hot as it will only cook on the outside it may not be cooked on the inside .

•Take a large bowl, whisk together the plain flour, salt, vanilla extract and the baking powder and leave it aside.

• Next onto our wet ingredients
•Add the plain yogurt, eggs and milk then mix well until the yoghurt is fully combined along with the rest . Keep working the batter until it comes together .  The consistency should be like a thick pancake batter .

• You can either use a tablespoon or an ice cream scoop to drop the batter and just put in a few at a time .
• Fry them until it turns golden brown and put some granulated sugar in a paper towel and make sure you coat the zeppole in the sugar straight after it comes out .
• serving suggestions
- strawberry jam
- whipped up cream
- raspberries
